Need a New Positive Perspective on Diabetes? To this day I am marvelled by my Grandmother's strength and determination in the face of Type 2 diabetes. Not unlike myself, she was a dessert lover. Chocolates, cookies, cakes..you name it. So even though her diagnosis stopped her from eating these goodies, it sure did not stop her from baking them. She baked and baked and experimented with delicious recipes and sweets. We, of course, got to be the taste-testers. She would be so pleased that we liked everything, offering seconds and thirds, but would not indulge herself. Every so often, though, she would indulge with a spoonful of ice-cream in her Earl Grey tea, or the tiniest sliver of poppy-seed cake that she just baked. She would let the flavour linger, enjoy the sweetness fully, and then when it was finished, it was finished. I often wonder if I would have the same strength. She also read books, learned to watch her blood glucose levels, and was certain to get in her daily exercise on walks and in the garden. Through her, I learned that there are two ways to see diabetes. One, as a limiting disease full of life- threatening complications. Or two, a gift that takes its recipient on a life-long journey of listening to and taking care of their body. When willing, there are so many things that one can do to increase the health and decrease the complications of diabetes. Some tips on eating with diabetes: An average amount of carbohydrates per meal is about 30 grams per meal and about 15 grams per snack, but this can depend on the time of day.
