Coffee Mousse Recipe

Wow and double wow. This coffee mousse recipe is so creamy and delicious. That paired with a simple white cake makes for the perfect parfait dessert!

Ingredients

Simple White Cake
1 cup granulated sugar
1/2 cup butter, at room temperature
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk

Mousse
3 cups heavy whipping cream, divided
2 Tablespoons french vanilla instant coffee
2 cups chocolate chip
1/2 teaspoon vanilla extract
3/4 cup sugar

Makes about 6 serving dishes

Directions

Cake

Preheat oven to 350 degrees F.

Grease and flour a 9x9 inch cake pan.

In a medium bowl,using an electric mixer, cream together the sugar and butter.

Beat in the eggs, one at a time, then stir in the vanilla.

In a measuring cup, combine the flour and baking powder together.

Add dry ingredients to the creamed mixture and mix well. Finally stir in the milk until batter is smooth.

Pour batter into the prepared pan.

Bake for 30 to 40 minutes in the preheated oven.

Cake is done when it springs back to the touch.

MOUSSE

In a small pot bring to boil 1 cup cream and instant coffee. Remove from heat. In a separate bowl put chocolate chips and pour hot cream over top and stir till chocolate has melted and smooth. Set aside

In a separate bowl whip remaining cream with vanilla to soft peaks. Gradually add sugar and whip to stiff peaks. Fold chocolate mixture into whipped cream until well incorporated.

ASSEMBLY

Cut cooled cake into small bite sized pieces, place a small amount of mousse in bottom of serving dishes and place a layer of cake bits. Place more mousse and cake till you've reach the top of serving dish ending off with mousse. Garnish with coffee beans. Cover and chill for about 4 hours. Serve.
