This deep fried cod recipe makes moist fish on the inside and a wonderful crispy batter on the outside. Delicous!
Cut the fish into 2-inch wide strips.
In a medium bowl, combine the flour and dry mustard. Set aside.
In a small bowl, combine the egg, water, sugar and salt.
Pour the wet ingredients into the dry and mix until well combined.
Put a large heavy duty skillet over medium-high heat and heat the oil to 400ºF.
Working in batches, dip the fillets into the batter, turning to coat generously.
Carefully drop the battered fish into the hot oil. Be careful not to over crowd the saucepan.
Fry the fish fillets for 2-3 minutes on each side, until golden brown.
Once cooked, remove the fish and drain on a wire rack set over top a baking sheet lined with paper towels.
Cook the remaining fish and then serve immediately.
