Watermelon Granita Recipe

This watermelon Granita not only looks good, it also tastes good. Enjoy bites of refreshing watermelon slush that is flavored with lime juice.

Ingredients

1/2 cup granulated sugar
1/2 cup water
1/3 cup lime juice
1 teaspoon lime rind, finely grated
7 cups seedless watermelon, cubed

(Serves 4-6)

Directions

In a small saucepan set over medium high heat, combine sugar and water. Stir until sugar has dissolved and mixture begins to boil.

Once boiling, cook, without stirring, for 3-4 minutes until the mixture becomes thick and syrupy.

Remove from the heat.

Stir in lime juice and lime rind. Set aside to cool completely.

Meanwhile, puree the watermelon until smooth, using a blender. Work in batches if necessary.

Transfer the watermelon puree to a large mixing bowl.

Add the lime syrup and mix until well combined.

Pour the watermelon mixture into a metal cake pan and transfer to the freezer for 3-4 hours.

While in the freezer, repeatedly stir with a fork every 30 minutes until the mixture has the consistence of shaved ice.

To serve, scoop watermelon granita into individual glasses and garnish with a piece of watermelon.

Serve immediately.
