This angel food loaf recipe makes a tasty simple cake. This recipe calls for a lot of egg whites, but the egg yolks can always be used to make an omelette so there is nothing wasted.
Preheat oven to 400 degrees F.
Line the bottom of a loaf pan with parchment. Do not grease.
Sift flour and confectioner's sugar 3 times. Whip egg whites, cream of tartar, salt and vanilla until mixture is frothy. Continuing whipping gradually adding sugar until sugar is all gone and egg whites have formed soft peaks.
In thirds fold in flour mixture into egg whites until incorporated. Do not over mix too much.
Pour batter into prepared loaf pan and bake for 25 - 30 minutes or until cake is golden brown. Let cool completely on a wire rack upside down. You'll have to gently pull loaf off of sides of pan to release it. Serve
