Apple Crisp Muffins Recipe

This recipe for apple crisp muffins has a tasty surprise when you take a bite. The center has a cream cheese filling. The crumble topping also adds texture and flavor with old fashioned oats and cinnamon. This is an extra tasty muffin.

Ingredients

Apple Muffin Base
2 cups all purpose flour
1/3 cup packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 egg, beaten
1 cup milk
1/2 cup vegetbale oil
2 cups finely chopped peeled apples (granny smith)
1/4 teaspoon ground nutmeg

Filling
1 (8 ounce) packages cream cheese, at room temperature
2 Tablespoons maple syrup
4 teaspoons grated orange peel

Topping
1/4 cup all purpose flour
1/4 cup old fashioned oats
1/4 cup packed brown sugar
1/4 teaspoon ground cinnamon
3 Tablespoons cold butter

(Makes 12 muffins)

Directions

Preheat oven to 400 degrees F.

Paper line or grease a muffin tin.

Peel and finely chop the two apples in a bowl and set aside.

In a large bowl, combine the flour, sugar, baking powder, salt, nutmeg and cinnamon.

In a second bowl,mix together the the egg, milk and oil.

Stir the wet ingredients into the dry ingredients just until moistened.

Stir in the apples.

Fill the muffin cups 3/4 full.

Filling

In a small bowl, beat together the cream cheese, maple syrup, and orange peel until smooth.

Drop by tablespoonfuls into centers of muffins.

Topping

In a bowl, combine the flour, oats, brown sugar and cinnamon.

Cut in butter until crumbly.

Sprinkle over filling.

Bake in the preheated oven for 15-20 minutes or until a knife inserted in center comes out clean.

Remove from oven and cool before transfer muffins to a wire rack.
