Apple Ginger Cake Recipe

This apple ginger cake recipe makes one 9 inch layer of moist cake, flavored with ginger and delightful little bites of apple inside.

Ingredients

1 1/2 cups all purpose flour
1/2 cup brown sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
2 large eggs, beaten
1/2 cup applesauce
1/4 cup vegetable oil
1 teaspoon pure vanilla extract
1 Tablespoon molasses
2 Tablespoons fresh ginger, peeled & diced finely
1 1/2 cups apples,(2 apples) peeled, seeds removed and cut into small bite sized pieces.
*Optional 1/2 cup raisins

Garnish
confectioners' sugar

Directions

Preheat the oven to 350 degrees F.

Line a 9x9 inch round cake pan with parchment paper and grease the parchment paper with butter.

In a mixing bowl, mix together the flour, brown sugar, baking soda,salt and cinnamon and set aside.

In a large mixing bowl, use and electric mixer to beat together the eggs, apple sauce, oil, vanilla, molasses and ginger.

Add the apple pieces and beat in.

Stir in the raisins if using.

Add the flour mixture to the wet mixture in increments and beat in until well combined.

Pour the batter into the prepared pan, place into the oven and bake for 50-55 minutes or until a toothpick inserted in the middle comes out clean.

Remove and place onto a cooling rack.

After 10 minutes remove the cake directly onto the rack and peel off the parchment paper. Place right side up.

Once cooled sprinkle with confectioners' sugar to garnish.

This cake would go well drizzled with a little caramel sauce.
