Apple Parfait Recipe

Make your own stewed apples, vanilla pudding and brown sugar sauce for this layered truly home-style parfait.

Ingredients

Stewed Apples
4 apples, cored, peeled, and sliced into small pieces
1-1/2 cups water
1/3 cup brown sugar
2 Tablespoons all purpose flour
1/4 teaspoon salt
1/2 teaspoon ground cinnamon

Vanilla Pudding
2 cups milk
1/2 cup granulated sugar
3 Tablespoons cornstarch
1/4 teaspoon salt
1 teaspoon vanilla extract
1 tablespoon butter

Brown Sugar Sauce
1 cup packed brown sugar
1/4 cup all purpose flour
1/2 teaspoon salt
2 cups water
1 teaspoon vanilla

Garnish
Peanuts or nuts of your choice to sprinkle on top.


Directions

Stewed Apples

Combine all ingredients in a medium saucepan.

Stir well and cook at a low simmer for 30-45 minutes,stirring frequently, until the apples are tender but not falling apart.

Let cool.

Vanilla Pudding

In medium saucepan over medium heat, heat milk until bubbles form at edges.

In a measuring cup, stir together the sugar, cornstarch and salt.

Pour the dry ingredients into hot milk, a little at a time, stirring to dissolve.

Continue to cook and stir until mixture is thick. Do not boil.

Remove from heat, set aside to cool.

(Makes about 2 cups)

Brown Sugar Sauce

On the stove top in a medium sized saucepan, stir the brown sugar, flour and salt together, combine well.

Stir in the water and vanilla.

Heat, stirring, over medium heat until sauce boils and thickens.

(Makes about 2 1/2 cups)

Assembly

Put a layer of stewed apples, a layer of vanilla pudding, a layer of brown sugar sauce and garnish with chopped nuts.
