Applesauce Corn Muffins Recipe

This applesauce corn muffins recipe gives you a moist muffin with very nice flavor.

Ingredients

1 1/4 cup all purpose flour
3/4 cup corn meal
1/3 cup granulated sugar
3 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup applesauce
1/3 cup milk
1/4 cup grapeseed oil
1 egg

(Makes 12 muffins)

Directions

Preheat oven to 425 degrees F.

Line with paper liners or grease a 12 hole muffin tin.

In a bowl, stir together the flour, corn meal, sugar, baking powder, cinnamon and salt.

In a mixing bowl, mix together the applesauce, milk, oil and egg using an electric mixer on low speed.

Add the dry ingredients to the wet using the electric mixer on low to medium speed. Just mix until combined. Don't overmix.

Divide the batter into the prepared muffin cups filling each to 2/3 full.

Place into the preheated oven and bake for 15-20 minutes or until a toothpick inserted in the middle comes out clean.

Remove to a cooling rack and after 5 minutes, remove the individual muffins from the tin onto the cooling rack.

These muffins are especially tasty when warm.
