Apricot Pork Stir Fry Recipe

An appealing colorful recipe for Apricot Pork Stir Fry .

Ingredients

1 pound lean boneless pork loin
1/2 teaspoon ground white pepper
1/4 teaspoon salt
3/4 cup apricot spread
1 tablespoon cornstarch
Vegetable cooking spray
1 teaspoon peeled, minced ginger
1 can baby corn *Cut some horizontally to create a beautiful looking dish
2 carrots peeled, sliced and par boiled in a small amount of water until just soft * use a crinkle cutter for a creative looking carrot
6 ounces fresh snow peas pods, trimmed
Makes 6 (1 cup size) servings.

Directions

Trim fat from pork. Partially freeze pork; slice diagonally across grain into thin strips. Sprinkle with pepper and salt; set aside.

Combine apricot spread and cornstarch in a small bowl; stir well, and set mixture aside.

Coat a large nonstick skillet or wok with cooking spray; place over medium-high heat until hot. Add ginger; stir-fry 30 seconds. Add sliced pork and cook over medium-high heat until cooked through. Add ginger; stir-fry 30 seconds.

Add par boiled carrots, swow pea pods and baby corn and stir-fry 5 minutes.

Add reserved apricot mixture; cook 1 minute or until mixture is thickened. Cover and cook 1 minute or until thoroughly heated.
