Bachelorette Party Cupcakes Recipe

These are to die for bachelorette party cupcakes that everyone will love. You can also make them into mini cupcakes for bite sized treats.

Ingredients

Cupcake

1/2 cup butter
1/4 cup bittersweet chocolate, chopped
1/2 cup cocoa powder
3/4 cup cake flour
1/2 teaspoon baking soda
3/4 teaspoon baking powder
3/4 cup granulated sugar
1/2 teaspoon salt
2 eggs
1 teaspoon vanilla extract
1/2 cup sour cream

Frosting
1 cup unsalted butter, at room temperature
2 1/2 cups confectioners sugar
1 tablespoon vanilla extract
5-6 drops pink food coloring

Garnish - most cake decorating stores, and even walmart has a fun section for making your cupcakes have a theme. If you are well planning, search online and order the perfect garnish.

Directions

Preheat oven to 350F.

Line a muffin tin with cupcake liners.

In a small pot on low heat melt butter and chocolate, stirring to keep it smooth and prevent burning. Add in cocoa powder and mix in till smooth. Set aside to cool.

Whisk together flour, baking soda, baking powder, salt, and sugar. Add in eggs, vanilla, and sour cream. Mix till well incorporated. Mix in melted chocolate.

Scoop batter into prepared muffin tin and fill 3/4. Bake for 20 to 25 minutes, or until an inserted toothpick comes out clean. Set to cool, once cool enough to touch turn out of pan and let cool fully on a wire rack.

Frosting

In a large mixing bowl, whip the butter on medium-high speed for 5 minutes, stopping to scrape the bowl once or twice.

Reduce the speed to low and gradually add the powdered sugar. Once all of the powdered sugar is incorporated, increase the speed to medium-high and add the vanilla and food colouring, mixing until incorporated and desired color is reached. Whip at medium-high speed until light and fluffy, about 2 minutes, scraping the bowl as needed.

Pipe icing onto each cupcake and sprinkles and party decorations.
