Bacon Wrapped Chicken Bites Recipe

These bacon wrapped chicken bites are easy to prepare and smell so delicious.

Ingredients

Makes about 24 bites

1 lb boneless, skinless chicken breasts
1 package of bacon
3 Tablespoons Dijon mustard
3 Tablespoons honey
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper

*Optional: Parsley Herb Butter for piped garnish
1/4 cup butter, at room temperature
+ 1 Tablespoon finely chopped parsley, stirred into soften butter and put into a piping bag

Directions

Preheat the oven to 425F.

Line a baking sheet with aluminum foil. Place a baking rack onto the foil that you can put the bacon wrapped chicken onto to keep it from sitting in pan directly. Set aside.

Rinse the chicken breasts in cold water. Pat dry.

Cut the breasts into about 24 bite size pieces.

Cut the bacon strips into thirds.

Wrap each piece of chicken with a piece of bacon and secure with a toothpick.

Have a shallow bowl set beside you to place each one into for now.

In a small bowl, stir together the Dijon mustard, honey, garlic powder, salt and pepper. Use a pastry brush to coat each of the bites. As you coat them, place them onto the baking rack and leave space between them.

Place into the preheated oven and bake for 25-30 minutes

until bacon is browned and chicken is cooked through completely.

Remove from the oven and cool slightly before serving.

*Optional; Pipe on a little parsley herb butter.

*Note: If you like really crispy well done bacon, you can pre-cook the bacon in a frying pan until it is half way done before wrapping it around the chicken.
