Preheat oven to 425 degrees.
Cut the top and bottom off of your onion and remove the skin. Score the onion fairly deep, but don’t cut all the way through. Make a few cross cuts while you’re scoring.
Wrap bacon around onion, securing with a toothpick. You’ll likely need 2 slices of bacon to go around the onion.
Top onion with salt and pepper, then a slice of butter.
Place onion on a baking sheet at bake for 1 hour or until onion is as soft as you’d like. top with shredded cheese and bake another 5 mins. Serve hot.
