Baked Dill Potatoes Recipe

This easy baked dill potato recipe has you bake each potato in it's own foil wrapper, then open it at the end to crisp the potatoes. These potatoes are delicious!

Ingredients

4 large baking potatoes
4 teaspoons butter
salt
Fresh ground black pepper
2 teaspoons fresh dill
garlic powder (optional)
4 sheets aluminum foil

(Serves 4)

Directions

Preheat your oven to 375ºF.

Peel and wash the potatoes and dry them with a paper towel.

Cut slices horizontally into the potato, leaving about 1/2-inch intact at the bottom. Be careful not to cut all the way through.

Using 1 teaspoon butter for each potato, rub them with the butter until evenly coated. Try and rub some butter between the slices as well, being careful not the split the potatoes.

Sprinkle each potato generously with salt and fresh ground black pepper.

Sprinkle over a small amount of garlic powder, if using.

Finally sprinkle 1/2 teaspoon of dill over each potato.

Wrap each potato tightly with aluminium foil, shiny side in.

Transfer the potatoes to a baking sheet and bake in the preheated oven for 45 minutes, or until cooked. Open the foil package up and cook a little longer to make them crispier.

Serve hot.
