This baked french toast recipe would be delicious for brunch. Because it is made with cheeses, it will go well with a fresh salad.
Preheat oven to 425.
Have ready a heat proof baking dish large enough to hold the 4 pieces of bread without stacking them.
In a food processor or blender, blend the cottage cheese, milk, sugar, egg, egg white, and vanilla for about 1 minute or until smooth.
Transfer the mixture to a shallow dish, place the bread pieces in, and let stand for 10 minutes, absorbing the mixture.
Place the empty baking dish into the preheated oven for about 5 minutes to heat the dish.
Remove the baking sheet from the oven,and use a pastry brush to paint 1 tablespoon of butter onto the hot surface. Place the soaked bread on it, and bake for 6 minutes.
Turn the bread over and bake 5 to 6 minutes longer or until golden brown.
Sprinkle the grated cheese onto the cooked french toast and return to the oven a few more minutes until the cheese has melted and is golden brown.
Serve with a green salad, tomatoes and a little freshly ground pepper.
Serve with no sugar added jam.
