This baked potato with bacon dish, is a very basic recipe that combines two wonderful foods together. Serve with sour cream and dress it up with colorful argula for a bit of a nippy flavor.
Preheat oven to 400 ºF.
Line a baking sheet with aluminium foil and sprinkle over a layer of salt. This will make the potato skins crispy.
With clean hands, rub the potatoes with 1/2 teaspoon olive oil and transfer to the prepared baking sheet.
Bake potatoes in the preheated oven until cooked through and soft on the inside, crispy on the outside. About for 1 hour.
10 minutes before the potatoes are done, fry the bacon in a large skillet set over medium heat, until crispy.
Once potatoes are cooked, transfer them to serving plates.
Top each potato with a dollop of sour cream, 2 slices of bacon, and a few leaves of arugula.
Serve hot.
