Baked Rice Pudding Recipe

1 cup short grain rice
2 1/2 cups whole milk
1/4 cup caster sugar
1/8 cup unsalted butter
1/2 teaspoon ground nutmeg or cinnamon
1 teaspoon vanilla extract


Preheat oven to 325˚F.

Grease a small oven proof dish with butter.

In a sauce pan mix the rice with the milk and leave to soak for 5-10 minutes.

Place over medium to high heat and bring the soaked rice mixture gently to the boil. Shut off.

As soon as the milk starts to bubble pour into the baking dish.

Stir in the sugar, butter and vanilla until dissolved. Sprinkle the nutmeg or cinnamon over the top.

Place into the preheated oven and bake for 1 hour or until all the liquid is gone and the pudding has a golden skin on top.
