Baked Turkey Meatballs Recipe

This baked turkey meatball recipe can be made with or without the skewers. They would go very well with some steamed white rice.

Ingredients

1 pound ground turkey breast
1 egg
1/2 cup finely grated carrot or sweet potato
2 tablespoons oatmeal or breadcrumbs
2 tablespoons parsley
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon paprika
2 tablespoons grated Parmesan
4 long wooden skewers - soaked in water for 30 minutes

Serves 4

Directions

Preheat oven to 350 degrees F.

Line a baking dish with parchment paper and grease with olive oil.

Use a large mixing bowl.

Combine all the ingredients in the bowl using first a wooden spoon, then clean hands to combine the ingredients in evenly.

Have a plate beside you.

Divide the meat into 4 even sections, then divide each section into 6 meatballs, placing them onto the plate as you form them.

Using your soaked wooden skewer, place 6 meatballs onto each.

Place the skewers, leaving space between them onto the prepared baking dish.

Bake 20 to 25 minutes or until firm and lightly brown.

Turn the skewers over at the half time mark so they brown all over.

Garnish with fresh parsley if desired.
