This pudding recipe is so easy to make from scratch. It is creamy and extra yummy with a layer of fresh banana slices tucked at the bottom of the dish.
3 eggs, beaten
1 dash salt
2 Tablespoons cornstarch
2 cups whole milk
1 teaspoon pure vanilla extract
2-3 ripe bananas, sliced
vanilla cookie wafers
Makes 4-6 servings
Mix the sugar and eggs together in a medium sized saucepan.
Stir in the salt, cornstarch and milk to combine.
Turn the heat to medium-high and bring to a boil, stirring constantly.
Once thickened, remove from the heat and add the vanilla. Stir well to combine.
In serving bowls, put a double layer of sliced bananas at the bottom of each dish.
Fill with the pudding two thirds of the way up and place the cookie wafers around the outside of the dish.
Fill the rest of the way with pudding ant garnish with a banana slice.
Cover each with plastic wrap and refrigerate for one hour before serving.
