Creamy and delicous.
Layer the Nilla wafers and the fresh sliced bananas in a medium sized bowl.
Repeat two more times with another layer of wafers and the remaining bananas. Save a few wafers and bananas for garnish on the top.
Place the sugar, flour. egg yolks and milk into a heavy bottom saucepan or the top of a double boiler.
Using medium heat, cook the mixture. Stir well with a wire whisk. Allow the pudding to cook, stirring constantly to prevent scorching.
Cook for about fifteen minutes or until thickened.
Stir in the salt and vanilla.
When ready, pour over the wafers and bananas.
The pudding will make its way through the layers.
You can use a butter knife to gently nudge the wafers and banana slices allowing the pudding to settle through. Garnish the sides and top with wafers and a few banana slices.
Let sit for about five minutes or so before serving, to allow wafers time to absorb pudding.
