Banana Walnut Loaf Recipe

This banana walnut loaf will fill the house with the most wonderful aromas while it is baking. This tasty loaf is perfect for your afternoon coffee break.

Ingredients

Banana Walnut Loaf
1/2 cup butter, at room temperature
1 1/4 cups granulated sugar
2 eggs
1 1/2 cups mashed bananas
2 1/4 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon pure vanilla extract
1/2 cup chopped walnuts

Garnish
1/2 cup confectioners' sugar
1/2 cup chopped walnuts

Directions

Preheat oven to 375 degrees F.

Gease a 5x13 inch loaf pan with butter.

In a large mixing bowl, using an electric mixer, cream together the butter and sugar. Beat until light and fluffy.

Beat in one egg at a time to incorporate.

Add in the mashed bananas.

In a second bowl, stir together the flour, baking powder, baking soda, salt and cinnamon.

Beat the flour mixture into the wet mixture adding a third at a time. Mix in the vanilla.

Stir in the walnut pieces and transfer to the prepared baking pan.

Place into the preheated oven and bake for 45 minutes or until a toothpick inserted into the middle comes out clean.

Remove onto a cooling rack. After 10 minutes turn the loaf onto the rack and flip right side up.

Once cooled place onto a serving plate, dust the top with confectioners' sugar and garnish with chopped walnuts.
