Banana Walnut Muffin Recipe

A delicious muffin that the kids will love.

Ingredients

3 ripened, mashed bananas
3/4 cup sugar
2 T. cornstarch (or arrowroot)
2 T. water
1/3 cup butter, melted
1/2 t. salt
1 t. vanilla
2 T. baking powder
1 cup whole wheat pastry flour
1/2 cup unbleached all-purpose flour
1/2 cup finely chopped walnuts

Buttercream Frosting
1/2 cup unsalted butter, softened
3 cups powdered sugar
1 teaspoon vanilla extract
2 to 3 Tbsp. milk

Directions

Preheat oven to 375 degrees.

Prepare your muffin tins by either lining with cups or spraying with non-stick spray.

In a large bowl or mixer combine the mashed bananas, sugar, cornstarch, water, melted butter, salt, and vanilla. Mix until well combined.

In a separate bowl, combine flour and baking powder.

Slowly add the flour mixture to the banana mixture, until all is incorporated.

Pour batter into muffin tins about ¾ of the way full.

Bake for 25-30 minutes.

Let cool for 5 minutes before transferring to a cooling rack.

Prepare frosting by beating butter with an electric mixer at medium-high speed until creamy.

Gradually beat in sugar until smooth. Beat in vanilla and 2 Tbsp. milk, adding additional milk, if necessary, for desired consistency.

When muffins are cool, spread on frosting and sprinkle with walnuts.
