Big Apple Pancake Recipe

Here is a fun and tasty big apple pancake that you can enjoy for a special morning breakfast or would make a fantastic dessert.

Ingredients

Makes (1) 10-11 inch cast iron skillet

1/4 cup (1/2 stick)unsalted butter
1 large sweet apple, like a Golden Delicious
1/2 cup whole milk
1/2 cup all purpose flour
4 large eggs
3 Tablespoons granulated sugar
1/2 teaspoon pure vanilla extract
1/4 teaspoon salt
confectioners' sugar for dusting

Directions

Always use a well seasoned cast iron skillet for the best results.

Preheat oven to 450�F.

Peel, core and slice the apple into thin wedges.

Melt the butter in the skillet over medium heat then transfer 2 tablespoons to a mixing bowl.

Place the apple wedges into the rest of the butter in a nice circular patter and cook for about five minutes, turning over once until the apples begin to soften.

Add the milk, flour, eggs, sugar and vanilla to the mixing bowl and use and electric mixer on medium to high to mix until you have a smooth batter.

Pour the batter over the apple pieces and transfer the skillet into the oven on the middle rack.

Bake for about 15 minutes until the pancake is puffed and a golden brown.

Remove from the oven and dust with confectioners' sugar.

Serve nice and hot.

Great with other fruit, maple syrup, whipping cream or yogurt.
