This blueberry streusel cake is easy to make and takes only moments to throw together. It is extra good when warm and served with ice cream.
Cake
Preheat oven to 350 degrees F.
Grease and flour a 9-inch square pan.
In a small bowl, combine the blueberries and 2 tablespoons of the flour, toss gently and set aside.
In a large mixing bowl, combine butter, flour,baking powder, salt, sugar, and milk. Use an electric mixer and beat for 2 minutes at medium speed using a spatula when necessary to scrape down the sides.
Add the egg and beat one more minute.
Fold in blueberries with a wooden spoon.
Spread batter evenly in the prepared pan.
Streusel
In a bowl, mix sugar, flour, and cinnamon together.
Cut in the butter until mixture resembles coarse meal.
Spread this mixture over the batter.
Place into the oven and bake for 50 minutes.
Remove and put on a cooling rack and let cool down at least to just warm before serving.
This dessert is extra good when warm and served with ice cream.
