Breaded Chicken Breasts Recipe
This breaded chicken breasts recipe makes tender juicy chicken that is great with fries or any other type of potato.
4 boneless, skinless, chicken breast halves
salt and pepper to season
2 eggs, beaten
2 Tablespoons olive oil
1 clove garlic, minced
2 Tablespoons fresh parsley, finely chopped
1 cup Italian style breadcrumbs
Pound chicken with a tenderizer hammer to flatten, then cut each one in half to make nice serving sizes.
Season with salt and pepper.
Beat eggs in a shallow bottomed bowl.
Stir the parsley into the bread crumbs.
Dip each piece of chicken first into the eggs and then into the bread crumbs to coat.
Heat oil in a large skillet over medium heat. Add garlic and saute until golden.
Cook chicken in the oil for about 5 minutes on each side or until chicken is cooked through.
Serve with fresh parsley pieces.
