Tartar Sauce
Make the tartar sauce first so it is ready to use on the fish burgers.
Stir the mayonnaise, relish, mustard, and lemon juice together in a bowl. Cover with plastic wrap and place into the refrigerator.
Fish Burgers
Have ready, the buns, lettuce and tomato slices.
Cut the fish into appropriate sizes to fit into the bun. Pat the fish fillets dry of any moisture with a paper towel. Season the fish with a light sprinkle of salt and pepper.
Prepare 3 bowls for dipping.
First bowl, put the flour.
Second bowl, put the beaten egg.
Third bowl, put the bread crumbs.
Roll the fish in the flour than shake off any excess. Dip the fillet in the egg and then the bread crumbs. Turn the fish several times in the bread crumbs and use your finger tips to help the crumbs stick.
Place a large skillet over medium heat
Add enough oil to cover the bottom of the skillet and heat the oil.
Add the fish to the skillet and cook for about 2 minutes per side, or until cooked through. If you have thick fillets you’ll need to cook them a little longer.
Remove the fish from the skillet and place it on some folded paper towel to absorb a little of the oil. Assemble the fish burgers, placing a lettuce leaf and tomato on each bun bottom, place the fish next, then spoon over 1-2 Tablespoons of tartar sauce onto each piece of fish and top with other half of the bun.
Serve immediately.
