What a great colorful food presentation with this broccoli and chicken pasta dish. Serve it with a fresh green salad.
Preheat oven to 400 degrees F.
To prepare the chicken, use a large skillet and spoon in the olive oil.
Turn the burner to medium high. Place thee chicken chunks into the skillet and cook for 5-10 minutes or until nicely browned and no longer pink inside. Turn off and set aside.
Cook the pasta.
Put water in a sauce pan and bring to a boil. Add the pasta, cover and simmer on medium low heat for 10 minutes or until pasta is tender.
Add the broccoli and cook covered, 5-7 minutes.
Drain the water out. Add the butter and stir in.
Do a taste test and add salt and pepper to taste.
Gently stir in the fried chicken chunks. Stir in the grated cheese.
Pour the contents into a buttered heat proof dish.
Add the tomato halves on the top.
Cover with aluminum foil bake in preheated oven for 20 minutes.
