Brown Sugar Frosted Chocolate Layer Cake Recipe

A Sweet recipe for chocolate layer cake with brown sugar frosting and chocolate icing.

Ingredients

Chocolate Cake
2 cups sugar
1 3/4 cups all purpose flour
3/4 cup cocoa
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water

Chocolate Icing
6 tablespoons butter, softened
2 2/3 cup powdered sugar
1/2 cup cocoa
1/3 cup milk
1 teaspoon vanilla extract

Brown Sugar Icing
1/2 cup butter
1 cup brown sugar, packed
1/4 cup milk
2 cups powdered sugar, sifted

Directions

Preheat oven to 350°. Grease two 9″ round pans.

Stir together sugar, flour, cocoa, baking powder, baking soda, and salt in a large bowl. Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes. Stir in boiling water and pour equally into pans. Bake for 25-30 minutes or until toothpick inserted in center comes out clean. Cool for 10 minutes and remove from pans to wire racks.

Chocolate Icing:Beat butter in a medium bowl. Add powdered sugar and cocoa alternately with milk. Beat to spreading consistency and stir in milk.

Brown Sugar Icing:In a saucepan, melt 1/2 cup butter. Add the brown sugar. Bring to a boil and reduce heat to medium low. Continue to boil for 2 minutes, stirring constantly. Add the milk and bring to a boil as you continue to stir. Remove from heat and cool to lukewarm. Gradually add the powdered sugar and beat until thick enough to spread.

To assemble Layer 1 cake with halfof brown sugar icing and a thin layer of chocolate icing. Top with other cake, brown sugar icing and chocolate icing again.
