A sweet and easy recipe for butter nut cookie balls.
1 cup butter, room temperature
1 1/2 cups confectionersí sugar
1 teaspoon pure vanilla extract
2 cups all purpose flour
1/2 cup finely chopped almonds
1/8 teaspoon salt
confectionersí sugar for rolling
Preheat oven to 350 degrees F.
In a large bowl, cream together the butter, confectioners sugar and vanilla.
In a new bowl combine flour, nuts and salt.
Stir flour mixture into butter mixture.
Roll dough into 1 inch balls.
Place 1-2 inches apart on a cookie sheet and bake for 20 minutes or until golden brown.
Pour confectionersí sugar into a shallow bowl, and while the cookies are still warm, gently rolling them in sugar, shaking off the excess and placing onto a wire rack while they cool.
