Buttermilk Pancakes Recipe

This classic buttermilk pancakes recipe makes light fluffy pancakes.

Ingredients

2 cups all purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
3 Tablespoons granulated sugar
1 teaspoon salt
2 eggs
1 3/4 cups buttermilk
1/2 cup sour cream
5 Tablespoons butter, melted
1 teaspoon pure vanilla extract
Butter for frying pan
Maple syrup for serving

(Makes 16-20 small pancakes)

Directions

Combine the flour, baking soda, baking powder, sugar and salt in a large bowl and set aside.

In a separate bowl, mix eggs, buttermilk, sour cream, melted butter and vanilla. Whisk to combine.

Add the wet ingredients to the dry and gently fold together, being careful not to over mix. A few lumps in the batter is ok.

Allow the batter to sit for 5 minutes.

Place a medium sized skillet over medium heat.

Put a small amount of butter in the hot frying pan and swirl around until the pan is coated.

Drop a small amount of batter onto the skillet.

Cook until large bubbles begin to form.

Flip pancake over and cook until lightly browned on the bottom.

Serve hot off the grill with maple syrup, while you continue to cook the rest of the batter.
