Cake With Fresh Fruit Topping Recipe
This cake with fresh fruit topping is so moist and delicious with a creamy center and topping.
6 eggs, room temperature
1 cup granulated sugar
3 Tablespoons honey
2 cups cake flour
2 teaspoons baking soda
1 cup cream cheese, softened
1 (14 oz) can condensed milk
1 3/4 cups sour cream
2 teaspoons vanilla
1 cup whipping cream
Garnishes to decorate the cake:
1 pint strawberries
2 kiwi, peeled and sliced
Fresh mint leaves
1/2 cup slivered almonds
Preheat oven to 350F.
Grease and flour 2 - 10 inch round cake pans, with butter.
Beat together eggs and sugar until pale and fluffy. Mix in honey until well incorporated. Set aside
Whisk together flour and baking soda. Add to egg mixture and mix until just combined.
Pour batter into prepared cake pans. Bake for 20 - 30 minutes, or until an inserted toothpick comes out clean, set to cool. Once cool enough to tough turn cakes out of pan and let cool completely on a wire rack.
Beat together cream cheese and condensed milk, until smooth and well combined. Mix in sour cream and vanilla until they are incorporated.
Cut cakes in half and frost in between each layer. Spread more frosting on top of cake and decorate with fresh fruit. You can substitute fruit for any you like.
