Caramel Apple Pecan Pie Recipe by Cooking Connections

Ingredients

1 double-crust pastry dough (recipe follows)

4 lbs. Granny Smith apples, peeled, cored and sliced in 1/4-inch slices
Zest of 1 lemon
3 Tbsp. freshly squeezed lemon juice
1/2 cup granulated sugar
1/3 cup light brown sugar
1/4 cup all-purpose flour
1 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/8 tsp. ground allspice
1 cup pecans, chopped
1 1/2 cups Kraft caramels, cut in fourths
1 egg, beaten
1 Tbsp. water
1 additional tsp. granulated sugar

For Pastry Dough:
12 Tbsp. (1 1/2 sticks) very cold unsalted butter
3 cups all-purpose flour
1 tsp. kosher salt
1 Tbsp. sugar
1/3 cup very cold vegetable shortening
6-8 Tbsp. (about 1/2 cup) ice water
