In a heavy saucepan, melt the butter.
Add in flour and whisk for 1 minute.
Slowly add in the half and half cream and whisk until the sauce is thick.
Separate egg yolks and mix them in cooking over low heat for 2 minutes.
Add in the cheese, and stir over low heat until melted.
Remove the sauce from the heat and season with salt and white pepper.
Pour sauce warm over food.
If you are making it ahead of time you can keep in in airtight container in fridge and reheat to serve.
