Cheesecake With Brown Sugar Glaze Recipe

A Delicious recipe for cheesecake with brown sugar glaze.

Ingredients

crust
1 1/2 cups graham cracker crumbs
3 Tablespoons granulated sugar
1/3 cup butter, melted
Filling
4 packages (8 oz. each) Cream Cheese, at room temperature
1 cup granulated sugar
1 teaspoons vanilla
4 eggs
Sauce
1 cup brown sugar sugar
1/4 cup water
3/4 cup heavy cream
3 1/2 tablespoons unsalted butter
1 teaspoon sea salt

Directions

Preheat oven to 350 degrees F. Have ready a 9 inch springform pan.

combine graham crumbs, 3 Tbsp. sugar and butter; press onto bottom of pan.

Beat cream cheese, 1 cup sugar and vanilla with mixer until well blended. Add eggs, 1 at a time, mixing on low speed until blended. Pour over crust.

Bake for 1 hour, or until center is almost set. Loosen cake from rim of pan; cool then regridgerate for atleast 4 hours before removing rim.

To make the sauce. In a heavy-bottomed saucepan, combine the sugar and water over medium-low heat until the sugar dissolves. Increase the heat and bring to a boil, without stirring. If necessary, use a wet pastry brush to wash down any crystals on the side of the pan. Boil until the syrup is a deep amber color, about 5 to 6 minutes.

Remove the sugar from the heat and carefully whisk in the heavy cream. Stir in the unsalted butter, and salt. Transfer the caramel to a dish and cool.
