This cheesecake with ladyfingers recipe is a light and refreshing dessert.
Preheat oven to 325F.
In large bowl, beat together cream cheese, sugar, eggs, lemon juice and vanilla.
Beat in whipping cream until soft peaks form.
Line the sides of a 9-inch springform pan with ladyfingers; set aside.
Pour cake batter into pan.
Bake for 1 hour or until toothpick inserted in center comes out clean.
Sprinkle with grated lemon peel and mint leaves before serving.
