Cheesy Beef And Potato Casserole. Recipe

A satisfying meal for a cool fall day.

Ingredients

6 large potatoes, peeled and boiled
2 cups ground beef (or you could use turkey or pork)
2 tsp olive oil
1 tbsp of olive oil or butter
1 yellow onion, sliced thin
1 stalk of celery, sliced thin
2 cloves garlic
4 large tomatoes, cut into thin slices
1 cup grated mozzarella cheese
2 tbsp parmesan cheese
salt and pepper (to season)

Directions

Peel and boil your potatoes for NO MORE than 10 minutes - they will not be cooked through which is ok.

After 10 minutes, drain water from potatoes and let them cool in fridge.

Prepare a casserole dish by greasing the bottom with a tablespoon of some olive oil or butter.

Once cool, slice potatoes into circles, and line the casserole dish with some of your potatoes, setting the rest aside.

In a frying pan, add olive oil and sautee onion slices, garlic and celery until soft.

Season with salt and pepper (1 tsp of each)

Add ground beef to garlic and onions and sautee until beef is cooked through ( no longer pink).

Add cooked beef on top of potato layer in casserole dish.

Layer remaining potato slices over meat.

Layer any remaining meat onto potatoes.

Top with sliced tomatoes.

Evenly sprinkle mozzarella and parmesan cheese

Baked in oven at 350F for 15 minutes on middle rack.

After 15 minutes, turn oven to broil for 5-10 minutes to brown cheese.
