This cheesy pepperoni pizza has a delicious tomato base on a homemade crust.
Preheat oven to 400 degrees F.
In a large mixing bowl, blend together the flour, 1 cup Parmesan, yeast and salt. Sprinkle in the water and oil and then stir until soft dough forms.
Place the dough on a lightly floured surface and knead for about 5 minutes, until smooth and stretchy. Slowly add in remaining flour.
Separate the dough into 4 pieces. Store 3 pieces for later use.
Spray the remaining piece of dough with cooking spray and then wrap with plastic wrap. Allow it to stand for about 15 minutes.
Roll dough out onto a lightly floured pizza pan. Bake for about 6 minutes.
Remove from oven and top with tomato sauce, drained tomatoes, mozzarella, pepperoni and 1 tablespoon Parmesan cheese and then bake for another 15 minutes or until cheese is melted and slightly browned and the crust is golden brown.
Cut into 6 slices and serve.
