This chicken spring roll recipe is not that hard to do. They may seem a little tricky if you have not tried them before but the rice sheets are quite strong and pliable and the assembly just takes a little practice.

Soak rice paper sheets in hot water for 5 minutes until soft, then drain.
Lay sheets on one at a time on tea towel and spread the centre of each with 1 Tablespoon of the hoisin sauce.
Arrange the chicken, carrot, cucumber and green onion on each, being careful not to overfill them.
Sprinkle with cilantro, then fold in sides and roll up.
Serve with extra hoisin sauce or peanut sauce.
