Chili And Cheese Nachos Recipe

A Great, easy recipe for chili and cheese nachos.
1 onion, diced
1 red pepper, diced
1 Tablespoon oil
1 teaspoon dried parsley
1 can (540 mL) stewed tomatoes , undrained
1 can (398 mL) black beans, rinsed
4 cups nacho chips
2 cups cheese, grated
1-2 jalapeno peppers
In a large sauce pan over medium-high heat, Cook onions and peppers in oil 3 min. or until onions are tender, stirring frequently.
Stir in tomatoes and beans .
Bring to boil; simmer on low heat atleast 10 min, stirring frequently.
Preheat oven to 400 degrees F. Have ready a large baking sheet that is lined with tin foil.
Layer nachos, chili, and the jalapeno peppers on baking sheet and top with cheese.
Place in over and cook until cheese is melted and bubbly. Watch carefully so you do not burn the cheese.
