Chocolate Covered Cheesecake Bites Recipe

Make this fun and easy dessert using an ice cube tray.


Regular Cheesecake Ingredients:
1/4 Cup Plain Greek Yogurt
1/4 Cup Cream Cheese
2-3 tbsp honey
1/2 Tsp Vanilla Extract

OR a Vegan Option:

Vegan Cheesecake Ingredients:
1 Cup Pre-Soaked Cashews
2 Tbsp Coconut Oil
2 Tbsp Honey
1/2 Tsp Vanilla Extract
1/2 Tsp Lemon Juice

Chocolate Coating Ingredients:
1/2 Cup Virgin Coconut Oil
1/4 Cup Natural Cocoa
1/8 cup honey


Blend Cheesecake ingredients until smooth in your food processor and set aside.

In a separate food processor bowl blend Chocolate Coating ingredients until smooth.

Spray a pre-chilled, clean ice cube tray with oil.

Using a spoon pour the chocolate into each ice cube mold.

Coat the bottom and the sides of each ice cube mold using your spoon, by tilting it around to cover all sides.

Let chocolate harden in freezer for 5 minutes.

Fill each ice cube mold with cheesecake filling.

Top with a layer of chocolate coating.

Place in the freezer for 2-3 hours.

Remove from freezer and set on the counter for a minute or two.

Gently twisting the ice cube tray, as you would to remove ice cubes, remove each cheesecake bite and place on a plate.

Serve immediately, and if you do not plan to serve them put them back into the freezer.
