Ingredients

(makes 20 eclairs)
For the p�te a choux:
2/3 cup (150 ml) whole milk
2/3 cup (150 ml) water
1/2 cup plus 1 tablespoon (120 g) unsalted butter, cut into 1/4-inch cubes
1 tablespoon granulated sugar
1/2 teaspoon salt
1 1/3 cup (180 g) all-purpose flour
4 to 5 eggs, at room temperature

For the chocolate pastry cream:
3 1/4 cup (750 ml) whole milk
1 cup (185 g) granulated sugar, divided in half
8 egg yolks
1/3 cup (65 g) cornstarch
9 ounces (300 g) quality dark chocolate, 70% cacao, melted

For the chocolate ganache icing:
2/3 cup (150 ml) heavy cream
4 1/2 ounces (150 g) dark couverture chocolate, finely chopped
1 tablespoon unsalted butter, at room temperature
