Chocolate Fudge Layer Cake Recipe

This chocolate fudge layer cake will has bite after bite of delightful flavors!

Ingredients

Cake
1 3/4 cups all purpose flour
2 cups granulated sugar
3/4 cup cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup buttermilk
1/2 cup grape seed oil
2 eggs
1 teaspoon vanilla extract
1 cup fresh hot coffee

Fudge Filling
1 can (14 ounces) sweetened condensed milk
2 cups semisweet chocolate chips
3/4 cup chopped dried cherries
1 teaspoon vanilla extract

Ganache
1/2 cup semisweet chocolate chips
1/2 cup heavy cream

Serves 6 - 8

Directions

Cake

Preheat oven to 350 degrees F.

Grease and flour 2 - 9 inch cake pans with butter.

In a bowl whisk together flour, sugar, cocoa powder, baking soda, baking powder and salt. Set aside.

In a separate bowl slightly beat together buttermilk, oil, eggs, vanilla and hot coffee. Add to dry mixture and mix till well incorporated.

Pour batter into prepared cake pans and bake for 30 to 40 minutes, or until an inserted toothpick comes out clean. Set to cool, once cool enough turn cakes out of pan and let cool completely on a wire rack.

Fudge Filling

In a small pot on low heat, melt condensed milk and chocolate chips. Stir till smooth. Add in dried cherries and vanilla. Set aside

Assembly

In a 9 inch spring form pan place one layer of cake. Pour fudge filling on top of layer. Place other layer of cake on top filling. Set aside.

Ganache

In a double boiler, or a pot filled with water and a bowl. Melt chocolate and heavy cream and stir till smooth. Pour on top of cake layer, chill cake in fridge for a couple of hour so fudge and ganache harden up. Garnish with dusted cocoa powder and chocolate vermicelli.
