Chocolate Loaf Cake With Chocolate Glaze Recipe

A very yummy recipe for chocolate loaf cake served with crushed almonds and a chocolate glaze.

Ingredients

Cake
1/2 cup butter, at room temperature
1 cup packed brown sugar
1/2 cup granulated sugar
1 large egg, at room temperature
3/4 cup milk
1 teaspoon vanilla extract
1 1/2 cups all purpose flour
3/4 cup cocoa powder
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
Sauce
2 1/4 cups granulated sugar
3/4 cup unsweetened cocoa powder
1 1/2 Tablespoons all purpose flour
1/4 teaspoon salt
1 1/2 cups whole milk
1 tablespoon vanilla
Topping
crushed almonds

Directions

Preheat the oven to 325 degrees F. Butter and lightly flour a 9x5x3-inch loaf pan.

In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth. Add the sugars and beat until fluffy, about 3 minutes. Add the egg and beat well, then the milk and vanilla.

Combine the flour, cocoa, baking soda, baking powder and salt then add into wet ingredients.

Stir together with a spoon until well-blended but do not overmix. Scrape down the batter in the bowl, making sure the ingredients are well blended.

Pour the batter into the prepared loaf pan. Bake for 60 to 70 minutes, or until a cake tester inserted into the center of the loaf comes out clean.

Cool in pan for about 10 to 15 minutes, then remove to wire rack to cool completely.

To make the chocolate sauce. Place dry ingredients in a medium-sized saucepan, along with 1/2 cup of the milk and whisk to combine.

Add the remaining milk, bring the mixture to a boil, and whisk to combine well. When sauce boils, reduce heat to low and simmer very gently for 5 minutes, whisking often. Remove from heat, add vanilla, and cool.

To serve. place cakeon a serving tray then pour sauce over top. evenly sprinkle nuts over top.
