Chocolate Marshmallow Brownies Recipe

These chocolate marshmallow brownies are made with a crispy chocolate topping.

Ingredients

Brownies
3/4 cup cocoa powder
1 cup margarine or butter, melted
4 eggs
2 cups granulated sugar
1 teaspoon vanilla extract
1 cup all purpose flour, sifted

Filling
2 cups miniature marshmallows

Frosting
4 ounces unsweetened chocolate
1 cup margarine or butter, at room temperature
1 teaspoon vanilla extract
3 3/4 cups confectioners’ sugar
2 cups crisp rice cereal

Directions

Preheat oven to 350F.

Grease a 9 x 13 inch baking pan.

Brownie Layer:

In a large bowl, stir together cocoa powder and melted butter.

Add the eggs, sugar, and vanilla and mix well.

Add the flour and stir just until combined.

Spread the batter evenly in the prepared pan.

Place into the preheated oven and bake for

25 minutes or until a toothpick inserted in the center comes out clean.

Remove from oven and place onto a cooling rack.

Filling:

Lay marshmallows evenly over top and return to oven for 2 minutes or until marshmallows puff up.

Remove from oven. Set onto the cooling rack.

Topping:

Melt the chocolate and margarine in a medium size sauce pan over low heat. Stir in the vanilla, and confectioners’ sugar and mix until smooth and well incorporated

Stir in the rice cereal.

Drop the topping over marshmallows and press down with a spatula to cover evenly.

When cooled, cut into squares and store in the refrigerator.
