Chocolate Orange Cake Recipe

This chocolate orange cake is made in a loaf pan and is a very quick and easy treat to throw together. A wonderful choice when you are in the mood for a goodie, and don't want to fuss to much to make it.

Ingredients

1 1/2 cups all purpose flour
1/2 cup unsweetened cocoa
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup (1 stick) butter, at room temperature
1 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
zest from one orange
1 cup buttermilk
1/4 cup candied orange peel,chopped into small pieces
1/4 cup chocolate chips

Directions

Preheat oven to 350 degrees.

Grease and lightly flour one loaf tin.

Sift the cocoa and flour into a large bowl. Stir in the salt, baking powder an baking soda.

In a large mixing bowl, using an electric mixer, beat the butter and sugar together until nice and creamy.

Add the eggs, one at a time and beat in.

Mix in the vanilla and orange zest.

Using the electric mixer on low speed, alternate adding the flour mixture and the buttermilk. Start and end with the flour.

Mix just enough to combine.

Using a spatula, fold in the orange peel and chocolate chips.

Place into the preheated oven and bake for 55-60 minutes or until a toothpick inserted in the middle comes out clean.

Remove and place the cake pan onto a cooling rack.

Let cool for 5 minutes, then turn the cake out onto the rack.

Let cool further before cutting and eating.

This cake is very delicious fresh from the oven.
