Sift the cocoa into a bowl to combine with the the cornstarch and sugar and a pinch of salt.
Place mixture in a medium size saucepan on the stovetop.
Turn onto low and stir in just enough milk to create a smooth paste.
We suggest using a whisk when making pudding.
Slowly whisk in the remaining milk.
Turn the heat up to medium and cook, stirring the pudding slowly and constantly until mixture thickens and starts to boil.
Let it boil for half a minute, and continue stirring gently.
Remove from the heat and stir in vanilla.
Pour pudding into 3 or 4 fund dessert dishes and chill until set, about 4 hours.
