Wash and dry the apples and insert a wooden stick.
Line a baking sheet with parchment paper.
Grease the parchment paper.
In a small saucepan combine the water, syrup, and sugar together.
Bring to a boil and cook until a brown caramel color is reached. (250 degrees F on a candy thermometer).
Remove from heat and stir in the cinnamon and red coloring.
Let cool down a little.
Dip apples 1 at a time into heavy red syrup, drain well, and place on parchment paper to cool.
