Classic Carrot Cake Recipe
A Yummy classic carrot cake recipe, with a sweet creamy frosting.
3 cups grated carrots
2 cups all purpose flour
2 cups granulated sugar
2 teaspoons baking soda
1 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 1/2 cups vegetable oil
1 1/2 teaspoons vanilla extract
1/2 cup applesauce
3 1/2 cups confectioners’ sugar
1 cup cream cheese, at room temperature
1/2 cup butter, at room temperature
1 1/4 teaspoons vanilla
1 teaspoon walnuts, finely crushed
Preheat oven to 350 degrees F.
Grease and flour a 9×13 inch cake pan.
In a large bowl combine carrots, flour, sugar, baking soda, baking powder, salt and cinnamon.
Stir in the eggs, oil, vanilla and applesauce.
Pour batter into cake pan.
Bake for 35-40 minutes or until toothpick inserted in center of cake comes out clean.
Put onto a cooling rack and let cool fully.
To make the frosting, In medium bowl use an electric mixer to beat together all the ingredients until smooth.
Spread frosting over cooled cake, lightly dust with finely crushed walnuts or if you have fancier cake decorations like the carrots in this picture, then garnish as desired.
