Coconut Milk Chocolate Mousse Recipe

This recipe for Chocolate Mousse is made from Coconut Milk and is a great option if you dont want to use dairy products.

Ingredients

4 ounces dark chocolate (We used chunk Callebaut, you can use whatever dark chocolate you wish)
1 (400ml) can whole coconut milk (do not use a light version)
2 Tablespoons Baileys liquor
(Makes 4 servings)

Directions

Melt the chocolate in the top of a double boiler. When melted transfer to a small mearuring cup and up into the refrigerator to cool for about 5 minutes.

If you are using large chunk chocolate, chop it into fine pieces before melting.

Open the can of coconut milk and pour it into the chilled bowl.

Using an electric mixer beat the milk until it is nice and creamy.

Mix in the Baileys.

Mix in the chocolate and beat until well combined, scraping down the sides as necessary.

Divide the mousse into glasses. Cover each glass with plastic wrap and refrigerate for a few hours before serving.
