Ingredients

1/2 cup cottage cheese
1 egg
1 cup all purpose flour
1/2 teaspoon salt
1 1/4 teaspoons baking powder
2 Tablespoons granulated sugar
1/3 milk

Directions

Preheat oven to 425 degrees F.

In a large mixing bowl, Use a fork to blend the cottage cheese and egg together.

Add the flour, salt, baking powder and sugar, stir to combine.

Add milk and stir lightly.

Spoon into 10 muffin cups.

Bake for 15-18 minutes, or until a toothpick inserted in the center comes out clean.

Serve with fresh fruit and melted chocolate drizzle if desired.
